Florentines are a vintage Italian candy pastry made with nuts combined with sugar and melted in combination, steadily covered at the backside in chocolate.

Substances

Florentine

  • 2 egg whites
  • 100 g icing sugar
  • 260 g shaved almonds
  • Grated zest of 1 orange

Chocolate dip

  • 1kg chocolate (we use Cacao Barry 64 consistent with cent darkish at Mon Paris)

Way

Florentine

  1. Mix all substances in a bowl and blend via hand.
  2. With blank arms, first dip one hand in a bowl of room temperature water, after which select up a portion of the combo to make little teaspoon mounds on a covered tray. Mounds will have to be smartly spaced aside.
  3. Dip a fork within the water and flatten every portion very thinly.
  4. Bake 12 min at 150 C.

Chocolate dip
